Baldor Specialty Foods recently turned us onto an amazing spice called fennel pollen. This seasoning has an intense smell & taste with strong notes of licorice, citrus, and marshmallow. We always wanted to brew a Dry Irish Stout for St. Patrick’s Day and felt the chocolate, roasted, creamy character of a stout would be off-the-wall if we added a nice dose of this magical spice to it.
