Our friends at Baldor Specialty Foods are big into sustainability. They recently taught us the benefits of using pineapple cores & skins which are typically thrown away after they carve. It turns out that just because you can’t eat these pieces, it doesn’t mean they can’t provide big flavor and nutritional value. We learned they could be blended for juices and boiled for broths, so naturally, we had to make a B-Track beer with these “spare parts.” This crisp, slightly bitter Kolsch provides an excellent base for the classic tropical flavors of this ever popular juicy, sweet & tart fruit. Who knew sustainability could taste this good?
